multimedia/emby-server: Update to 3.0.5641.5, fix distinfo

The upstream project on GitHub was renamed from MediaBrowser to Emby
causing the following error:

  size mismatch: expected 54577043, actual 54582083

 - Update to 3.0.5641.5
 - Change the upstream repository name to compensate
